At Auchroisk distillery, the heavy character is produced by rapid mashing, quick fermentation and, in the wash stills, a rapid boiling regime which almost cooks the solids and allows controlled carryover of some solids. This almost singed character is most obvious at new make but recedes with maturation, being replaced by a balanced honeyed cereal sweetness.
Nose - Inviting, with notes of white peach, soft raisins, orange cream, vanilla and fresh linen. A fantastic nose.
Palate - Some cereal gristiness on the palate, but well-integrated and still light with floral touches. Fresh apricots and fondant fancies.
Finish - Mint choc chip ice cream
The Auchroisk distillery was built by Justerini & Brooks in 1974, to ensure a steady supply of malt whisky for their J&B blend. Although launched as a blending malt, master blender Jim Milne declared the quality of the bourbon-matured whisky sound enough to be sold as single-malt; however, it was still missing something. Accordingly, the spirit was given a year in sherry casks, which produced a much fuller, and fundamentally, more complex flavour.
