Non-chill-filtered whiskeys. This range was born in February 1999 on the occasion of a selection of barrels made at Signatory Vintage in the company of Andrew Symington. That day, a tasting in the dilution tank of a whiskey reduced to 43% but not filtered was the combination of circumstances which gave birth to a range called The Un-chillfiltered Collection ".

Beyond the cloudy appearance of the whiskey, this tasting allowed them to discover all the richness of an alcohol before filtration, a reinforced fatty texture and a reduced alcohol sensation. The temperature at which it takes place directly influences the texture of the whiskey. Since the mid-1970s, a method of filtration at very low temperature has been developed, making it possible to obtain whiskeys with a clear appearance and a fluid texture. Thus, some of them are filtered down to -10 ° C. At such temperatures, whiskeys "stripped" of their consistency and substance are less expressive. Cold filtration also ensures greater uniformity. Conversely, the absence of cold filtration combined with a gentle dilution makes it possible to obtain dense whiskeys, more complex with substance and endowed with great aromatic richness.
